While I agree with you about dark (and large) interfaces, this sounds more like a bug happening in your particular update installation, rather than Adobe's intentions. The latest update didn't hose my prefs here. Do you have a backup of your system that you could retreive your previous prefs from, and replace the new ones?

The PDFs should be no problem, so long as the type isn't coverted to outlines.
The Word documents will probably a much more significant headache. The only fail-safe solution would be to re-set the type in Word. There are quite a few PDF to DOC conversion tools around, including in Acrobat itself, but thankfully I've not had to test many. It's been a while, but last time I tried it was pretty woeful.

Looks to me like Srishti's suggestion is more or less the opposite - it stops OSX from disabling the GPU's performance,.
Not that I would defend PMed solutions, or the increase in poor advice from people actually employed by Adobe.
IMHO, GPU Performance still isn't ready for public release, not that the Illustrator dev team would let a little thing like that stand in their way!

You could also use a Pattern Brush applied to an ellipse. The rectangles at the top have different colour and opacies applied. Drag and drop them into the Brushes pallete, and apply them to an ellipse.

Try using Bridge to synchronise your CC colour settings, then assign the sRGB profile to the AI file and export again.

With Adobe Fonts, you 'activate' them, rather than downloading font files that you can actually see (without some trickery). Sometimes there can be quite a delay, but you should eventualy see an Adobe CC alert saying that the fonts have been activated.

Additionally, for shadows and highlights, I generally prefer to add black and white objects with different opacities, rather than adding colours. Black-filled objects with the blending set to Multiply for shadows, and white-filled objects with the blending mode set to screen for highlights. That way, the shadows and highlights change dynamically when you change the colour of the base object.

It's possible that her other suppliers don't actually need to open the files in Illustrator, and simply print the job using the PDF portion of the file as-is. Is there definitely editing that you need to do in Illustrator? You might be able to remove dielines etc by opening the file in Acrobat.

If you want the object exactly in the centre of the other two objects, group the two objects and align all three to the centre.

Adobe's color management system uses your monitor profile to convert from the document's embedded profile to the monitor profile and give you an accurate display. For this to work, both displays must be calibrated and profiled accurately and using the same settings for white point etc. For that, you need to use hardware/software like the aforementioned SpectraCal.
Turning color management off might make the document display more similar on both monitors, but you can guarantee it's also inaccurate on both monitors.

Personally, I'd agree with Monika, and recommend a 'late-binding' workflow. I'd only recommend converting in PS when you need to work with specific plates, and when you have exactly the right output profile. The 'taming' adjustments can still be done to the RGB images, using 'Proof Colours' and 'Gamut Warning'.

But Helvetica Neue Lt isn't a Typekit/Adobe Fonts font, so that's a separate issue. If it's installed in Windows, it should be available to all apps.

Is the white band straight and horizontal in your original artwork? If so, it will need distorting for the slightly conical shape of the coffee cup. What application did you create the artwork with?

Presuming you'll be delivering a PDF to the printer, I can't see any reason for production problems specific to this workflow. Just make sure you save your AI files with 'Create PDF Compatible File' selected.
I tend to keep die lines on a separate layer in both the AI and ID files. When you place the AI files in ID, check 'Show Import Options', and hide the die line layer. Then Copy and Paste in Place, move it to the die line layer, then go to Object > Object Layer Options and make jut the die line layer visible.

If you use Export For Screens rather than Export As, you can choose to Include Bleed.
Strangely, whichever setting you use in Export For Screens will apply to the next time you use Export As.

The unfortunate truth is, Powerpoint is entirely inappropriate for the job of creating professionally printed books. The 'convert to Adobe' advice sounds like someone has missinterpreted to the more appropriate advice 'use an Adobe program. In this case, it would probably be a case of using Illustrator and Photoshop for the graphics, and InDesign for the layout.

As has been said, that isn't a font, and think it's even slightly misleading for them to sell it as a 'typeface'.
I think the best option would be to cut your losses, choose a suitable retro-ish bold, condensed sans from Adobe Fonts, and use Illustrator to apply the roughness and halftone effect. You'll also pick up some useful skills along the way, for creating such effects.

It's just an annoying behaviour of Illustrator. It bounds rasterised clipping masks using the content of the mask rather than the mask itself.
You can get around it by creating the desired shape using Pathfinder functions instead.
Or if your goal is a raterised logo for screen use, you could make your artboard match the dimensions of the circle, and Export For Screens.
